A simple recipe for Roasting Chicken, with the possibility for a few additions and variations.
Preheat oven to 180deg
Place 2 sticks of butter underneath the skin on the chicken breast by sliding the butter underneath the skin next to the neck of the chicken. Lightly coat exterior in oil
Place the chicken in the oven, and cook until the exterior is a crispy golden brown, and the internal temperature should read 75deg and hold for 7 minutes. Another check is if the chicken is pierced at its thickest part (generally through the breast) as deep as possible, and if the juices run clear from the pierce point it is considered cooked.
